Easy recipe for non alcoholic Ginger Beer.
Recipe
125 grams ( 5 oz) grated root ginger
200 grams (8 oz) dark brown sugar
2 cloves
2 limes - zest and juice
1 Litre water
Method
To Serve
Put 3 ice cubes in to large glass, pour enough cordial to fill 3/4 of the glass. Top up with sparkling mineral water and add a slice of lemon or lime.
The mineral water may be replaced with gin, vodka or rum if you want a delicious long, cool alcoholic drink.

Method
- Put all the above ingredients into a saucepan large enough to contain them and bring up to boiling point for 2 minutes.
- Cover and leave for 2 hours.
- Strain the cordial into a jug and then pour into clean bottles ( or jam jars), put the lids on and leave in fridge to get cold.
- Use within 2 weeks.
